Chip City Opens in Fairfield

Chip City Cookies, a chain of cookie shops with sites in several East Coast states, recently opened its first Connecticut location at 1125 Post Road in Fairfield. The store held a ribbon-cutting ceremony on the opening day, and the co-founder, Theodore (Ted) Gailas, who started this business fresh out of NYU business school in 2008, joined Fairfield officials for the event.

Chip City Cookies is known for its wide variety of cookies with chips. The company rotates more than 40 unique flavors every year, such as peanut butter and jelly, the Everything Cookie (with sweet cream cheese and everything bagel mix), oatmeal apple pie, blueberry cheesecake, s’mores, lemon berry and cannoli. Each week, the menu changes to offer classic flavors and seasonal varieties. Fairfield’s current menu lists options like triple chocolate, cookies n’ cream, wild berry strudel and a dairy-free cookie butter cookie.

The company has 18 locations in New York and New Jersey 1, and is expanding to other new East Coast markets like Massachusetts, Florida, Maryland and Washington, D.C.
